Pillbox brewery was started summer 2009 in Solana Beach in my parent's condo, which was next to the popular surf spot, pillbox at fletcher cove. After a few brewing mishaps which spilled sticky wort all over the brand new stone flooring, Pillbox Brewery was moved to my apartment by moonlight beach in Encinitas. Looking at my kitchen, you could never guess I brew about 8 batches per year there, but I make it work.
Every 5 gallon batch of beer is custom designed, hand brewed, naturally conditioned, and bottled. I use a combination of extract brewing and partial mashing. All of my ingredients are shipped from a supplier in Georgia, Brewmaster's Warehouse.
For me, brewing is an art that I love to share. I hope I can share one with you soon.
